Mince Pie Baked Oats
Bring a bite of Christmas to your breakfast with these tasty mince pie alternatives.

Ingredients
- 80g Rolled oats
- 75g Self raising flour
- 75g Soft brown sugar
- 75g Butter- melted and cooled slightly
- 1 Large egg
- 2tsp Brandy/orange juice
- 100g Mincemeat
To serve: (optional)
- The zest of one lime and one orange
- 1tbsp Caster sugar
- 170ml Cream/ 170g mascarpone
- 20g Icing sugar
Method
- Preheat the oven to 190c/170c fan /gas mark 5. Prepare a cupcake tray lined with 6 cases.
- Soften the zest in the microwave for 20 seconds and coat with sugar on a small saucer, allow this to sit whilst you make the baked oats.
- In a small bowl mix the mincemeat and the brandy or orange juice, and set aside.
- Combine all the other ingredients and mix well.
- Spoon the batter into the cupcake cases filling them just under halfway. Top each with a tablespoon of mincemeat. Cover the mincemeat with the rest of the cake batter.
- Place in the preheated oven and cook for around 15 minutes. The batter is cooked when it springs back if your press it gently with a wooden spoon. Remove the cases and place the baked oats on a plate.
- Mix the cream with the sugar and spoon it onto the baked oats, top with the zest. Delicious served hot or cold.
