Winter Wonderland Mimosa

Ingredients
- 80ml Blue Raspberry Vodka
- 30g fresh Blueberries
- 1 x 20cl bottle Prosecco
- Juice of ½ a small Lemon
- 3 tsp Caster Sugar
- Ice
- 2 fluted Champagne Glasses
To garnish:
- Extra Blueberries
- A couple of Raspberries
Method
- Put the caster sugar on a small plate.
- Put the lemon juice in a small bowl.
- Dip the rim of each glass in the lemon juice, then dip into the sugar, turning the rim around to coat it. Allow the sugar to dry.
- Put the remaining lemon juice in a cocktail shaker.
- Cut the blueberries in half and add them to the shaker with a handful of ice cubes.
- Add the vodka, then shake vigorously for a few minutes.
- Strain the liquid into the two glasses, divide the prosecco between the two glasses and serve decorated with some berries.
