Winter Wonderland Mimosa

Ingredients

  • 80ml Blue Raspberry Vodka
  • 30g fresh Blueberries
  • 1 x 20cl bottle Prosecco
  • Juice of ½ a small Lemon
  • 3 tsp Caster Sugar
  • Ice
  • 2 fluted Champagne Glasses

To garnish:

  • Extra Blueberries
  • A couple of Raspberries    

Method

  1. Put the caster sugar on a small plate.
  2. Put the lemon juice in a small bowl.
  3. Dip the rim of each glass in the lemon juice, then dip into the sugar, turning the rim around to coat it. Allow the sugar to dry.
  4. Put the remaining lemon juice in a cocktail shaker.
  5. Cut the blueberries in half and add them to the shaker with a handful of ice cubes.
  6. Add the vodka, then shake vigorously for a few minutes.
  7. Strain the liquid into the two glasses, divide the prosecco between the two glasses and serve decorated with some berries.
