Festive Broccoli

Ingredients
- 200g Tenderstem Broccoli
- 30g Walnuts
- 20g Soft Brown Sugar
- 1 X Large Clementine
- ½ Tsp Paprika
- 10ml Olive Oil – Plus a little extra
- Salt and Black Pepper
Method
- Oil a frying pan lightly and cook the walnuts till slightly browned – sprinkle over the sugar and cook till melted – allow to cool.
- Grate the clementine and juice.
- Cook the broccoli in some boiling salted water till just tender – drain.
- Chop the sugared walnuts.
- Put the broccoli on a warm serving platter.
- Scatter over the grated rind.
- Mix the oil, clementine juice and paprika together – season and drizzle over the broccoli.
- Serve topped with the candied walnut crumb.
