Maple Christmas Slaw

Ingredients
- 125g Red Cabbage
- 125g Peeled Carrots
- 150g Sprouts
- 1 x Large Red Onion
- 15g Peeled Fresh Ginger
- 50ml Garlic Infused Olive Oil
- 25g Pecan Nuts – chopped
- 30ml Cider Apple Vinegar
- 40ml Maple Syrup
- Sea Salt and Black Pepper
Method
- Shred the cabbage finely.
- Peel, halve and thinly slice the red onion.
- Grate the carrot.
- Thinly slice the sprouts.
- Finely chop the ginger.
- In a wok heat the oil.
- Add all the vegetables and the ginger.
- Stir fry for 5/6 mins.
- Mix the cider vinegar and maple syrup together – season with some salt and black pepper.
- Stir this through the slaw and serve topped with the chopped nuts
