Maple Christmas Slaw

Ingredients

  • 125g Red Cabbage
  • 125g Peeled Carrots
  • 150g Sprouts
  • 1 x Large Red Onion
  • 15g Peeled Fresh Ginger
  • 50ml Garlic Infused Olive Oil
  • 25g Pecan Nuts – chopped
  • 30ml Cider Apple Vinegar
  • 40ml Maple Syrup
  • Sea Salt and Black Pepper

Method

  1. Shred the cabbage finely.
  2. Peel, halve and thinly slice the red onion.
  3. Grate the carrot.
  4. Thinly slice the sprouts.
  5. Finely chop the ginger.
  6. In a wok heat the oil.
  7. Add all the vegetables and the ginger.
  8. Stir fry for 5/6 mins.
  9. Mix the cider vinegar and maple syrup together – season with some salt and black pepper.
  10. Stir this through the slaw and serve topped with the chopped nuts
