All Day Breakfast Croissant Traybake

This tasty traybake takes on a brilliant twist on a standard brekky meal.

Ingredients

  • 8 rashers Oakhurst Smoked Back Bacon
  • 150ml Semi-Skimmed Milk
  • 100ml Single Cream
  • 2 medium Free-Range Eggs
  • 2 tsp Dijon Mustard
  • 4 Specially Selected All Butter Croissants
  • 100g Mature Grated Cheddar
  • 1 x 420g can Baked Beans

  

Method

  1. Preheat the oven to 180°C/160°C fan/gas mark 6.
  2. Lay the bacon rashers on a baking tray and bake for 10 minutes, until starting to crisp.
  3. Combine the milk, cream, eggs and mustard in a mixing bowl, season generously and whisk to combine and fold in the cheddar cheese.
  4. Slice the croissants lengthways and arrange them in the base of an ovenproof dish. Pour the egg mix over the croissants and allow the croissants to soak in the egg mixture for 10 minutes, turning halfway through.
  5. Add two rashers of bacon to the centre of each croissant.
  6. Bake for 20-25 minutes, until the egg mixture is just set.
  7. Warm the beans on the hob and serve along with the croissants.
