Galentine's Fortune Cookies

Ingredients
For the cookies:
- 2 Egg Whites
- ½ tsp Vanilla Extract
- 75g Plain Flour
- 2 level teaspoons Cornflour
- 115g Sugar
- Pinch of Salt
- 30ml Cold Water
- Red Food Colouring
To make the fortunes:
- Paper
- Scissors
- Red pen
Method
- Begin by making the fortunes – either print your fortunes out and cut to size or cut the paper into 12 rectangular strips about 1cm wide and 7cm long and write a message on each then decorate with a heart.
- Preheat the oven to 180°C/160°F/Gas Mark 4.
- Whisk the egg whites and vanilla extract until combined and foamy (about 2-3 minutes).
- Add the plain flour, cornflour and sugar and whisk until a smooth paste-like texture is achieved.
- Next, add the water and stir until you get a smooth, thin batter.
- Divide between 2 bowls and add 1-2 drops of red food colouring to one bowl and 3-4 drops to the other to make a pale pink batter and a dark pink/red batter.
- Line a baking tray with a silicone baking mat, or baking paper, and pour a tablespoon of the mixture onto the mat and smooth with the back of the spoon to make a thin circle of cookie batter, around 9-10cm across.
- Bake for 10-12 minutes until starting to turn golden around the edges.
- Remove from the oven and carefully, whilst still hot, use a spatula to help lift the cookie from the mat.
- Place the fortune in the centre, fold the edges together and place over the edge of a cup to bend into the fortune cookie shape.
- Place in a muffin tin to help the cookie keep the shape whilst it cools.
- The cookie will harden when completely cool – if the cookie is too soft to snap open when cool, cook the next batch for an additional 30-60 seconds. If the cookie is undercooked it will not harden fully.
- Repeat, cooking 1 or 2 at a time until you have used all your batter.
