Strawberry and Blueberry Pancake Tray Bake

Ingredients
- 250ml Semi-Skimmed Milk
- 20ml Lemon Juice
- 75g Caster Sugar
- 240g Plain Flour
- 1 flat tsp Baking Powder
- 1 medium Egg
- 40g Unsalted Butter
- 130g Strawberries, wiped and sliced
- 70g Blueberries
- Icing Sugar and Maple/Golden Syrup, to serve
Method
- Preheat the oven to 180°C/350°F/gas mark 4.
- Mix the milk and the lemon juice together and allow to sit for 15 minutes.
- Sift the flour and baking powder into a bowl.
- Add the sugar and mix.
- Add the milk, crack in the egg and whisk well for a smooth batter.
- Put half the butter into the baking tray and put into the oven to melt the butter and heat the tray.
- Melt the other half of the butter in a microwave.
- Pour the batter into the tray and with a spatula cover the base.
- Top with the sliced strawberries and blueberries.
- Pour over the remaining melted butter and bake in the oven for 20 minutes, until just set.
- Cut into squares and serve straight away, topped with some icing sugar and drizzled with syrup.
- Great served with ice cream as well.
