Strawberry and Blueberry Pancake Tray Bake

Ingredients

  • 250ml Semi-Skimmed Milk
  • 20ml Lemon Juice
  • 75g Caster Sugar
  • 240g Plain Flour
  • 1 flat tsp Baking Powder
  • 1 medium Egg
  • 40g Unsalted Butter
  • 130g Strawberries, wiped and sliced
  • 70g Blueberries
  • Icing Sugar and Maple/Golden Syrup, to serve

  

Method

  1. Preheat the oven to 180°C/350°F/gas mark 4.
  2. Mix the milk and the lemon juice together and allow to sit for 15 minutes.
  3. Sift the flour and baking powder into a bowl.
  4. Add the sugar and mix.
  5. Add the milk, crack in the egg and whisk well for a smooth batter.
  6. Put half the butter into the baking tray and put into the oven to melt the butter and heat the tray.
  7. Melt the other half of the butter in a microwave.
  8. Pour the batter into the tray and with a spatula cover the base.
  9. Top with the sliced strawberries and blueberries.
  10. Pour over the remaining melted butter and bake in the oven for 20 minutes, until just set.
  11. Cut into squares and serve straight away, topped with some icing sugar and drizzled with syrup.
  12. Great served with ice cream as well.
