The Mince Pie Extraordinaire

Home-made mince pie recipe with luxury mincemeat and almonds.

Ingredients
- 1 pack Specially Selected Ready Rolled Shortcrust Pastry
- 250g Specially Selected Luxury Mincemeat
- 70g Perfect for Baking Spread
- 70g Caster Sugar
- ½ tsp Almond Essence
- 1 medium Egg
- 40g Self Raising Flour
- 50g Ground Almonds
- 20g Flaked Almonds
- Butter to grease the tray
Method
- Pre-heat the oven to 190°C/375°F/Gas Mark 5.
- Lightly grease a 12-hole shallow non-stick bun tray.
- Put the flour, sugar, baking spread, ground almonds, almond essence and egg into a food processor and process to a smooth paste.
- Unroll the pastry. Cut 12 circles with an 8cm plain cutter.
- Gently press the pastry circles into the bun tray holes.
- Divide the mincemeat between the pastry circles.
- Top with the almond paste.
- Sprinkle over some flaked almonds.
- Bake in the oven for 25 minutes.
- Allow to cool slightly in the tin before taking out.
