Watermelon Cake

Deliciously fresh watermelon bursting with layers of fresh berries.

Ingredients

  • 1 x Watermelon
  • 3 x Oranges
  • 1 x Punnet Raspberries
  • 1 x Punnet Blackberries
  • 1 x Punnet Strawberries
  • 1 x 60g Pomegranate Seeds
  • 1 x Punnet Blueberries
  • Fresh Mint leaves

  

Method

  1. Cut out 3 circles from the middle of the watermelon.
  2. Then slice off the rind from the slices.
  3. Peel and cut the oranges into segments.
  4. Wash the strawberries.
  5. Using a melon baller, scoop the remaining melon into balls.
  6. Put a slice of the watermelon on a plate, - top with some orange segments, melon balls and berries.
  7. Repeat with the next slice.
  8. Then put the last slice of melon on top.
  9. Decorate with berries, orange segments, melon balls, seeds and fresh mint.

  

Recipe Tip

You can add a simple cream cheese frosting to each layer for added sweetness.
