BBQ Pork Fillet with Fried Potatoes

Ingredients
- 1 BBQ pork fillet
- 2 Baking potatoes
- 2 Baby gem lettuce
- 1/2 Garlic bulb
- 3 Sprigs of rosemary
- 1/2 Red onion
- 1 Cup white wine vinegar
- 1tbsp Sugar
- 1tbsp Water
- Olive oil
- Salt
- Pepper
Method
- Preheat the oven to 180 degrees.
- Bake the baking potatoes until just cooked. This can - and probably is best - to be done beforehand, even the day before. Once they are cooled enough to handle comfortably cut them in to slices and fry in a pan on a low heat with olive oil. Season with salt and pepper. Turn once browned.
- Follow the instructions for cooking the pork fillet and add some peeled shallots, rosemary and a halved garlic bulb to the tray.
- Bring the water, salt, vinegar, pinch of salt and sugar to the simmer, just long enough for the sugar to dissolve.
- Slice the red onion and place in the pickling liquor.
- Dress the gem lettuce with the pickled onion.
