Ingredients

  • 1 BBQ pork fillet
  • 2 Baking potatoes
  • 2 Baby gem lettuce
  • 1/2 Garlic bulb
  • 3 Sprigs of rosemary
  • 1/2 Red onion
  • 1 Cup white wine vinegar
  • 1tbsp Sugar
  • 1tbsp Water
  • Olive oil
  • Salt
  • Pepper

Method

  1. Preheat the oven to 180 degrees.
  2. Bake the baking potatoes until just cooked. This can - and probably is best - to be done beforehand, even the day before. Once they are cooled enough to handle comfortably cut them in to slices and fry in a pan on a low heat with olive oil. Season with salt and pepper. Turn once browned.
  3. Follow the instructions for cooking the pork fillet and add some peeled shallots, rosemary and a halved garlic bulb to the tray.
  4. Bring the water, salt, vinegar, pinch of salt and sugar to the simmer, just long enough for the sugar to dissolve.
  5. Slice the red onion and place in the pickling liquor.
  6. Dress the gem lettuce with the pickled onion.
