Butterfly Irish Chicken Breast

Ingredients
- 2 x Chicken breast
- 1 Pack tenderstem broccoli
- 150g Basmati rice or two packs of precooked rice
- 2 Limes
- Pinch mixed dried herbs Bunch of coriander
- Salt and pepper
- Olive oil
Method
- Butterfly the chicken and season well with the salt, pepper and dried herbs and a light coating of olive oil.
- Cook the chicken in a hot griddle pan until cooked through.
- Cook the rice following the instructions on the packet - you could use precooked packet rice if you like.
- Once the rice is cooked season it with the zest and juice of the limes and chopped coriander - save some lime to squeeze over the chicken.
- Cook the tender stem broccoli in boiling salted water for 2.5 minutes, strain off and allow to steam dry for a couple minutes then char in the griddle pan and season with salt and pepper.
