Butterfly Irish Chicken Breast

Ingredients

  • 2 x Chicken breast
  • 1 Pack tenderstem broccoli
  • 150g Basmati rice or two packs of precooked rice
  • 2 Limes
  • Pinch mixed dried herbs Bunch of coriander
  • Salt and pepper
  • Olive oil

Method

  1. Butterfly the chicken and season well with the salt, pepper and dried herbs and a light coating of olive oil.
  2. Cook the chicken in a hot griddle pan until cooked through.
  3. Cook the rice following the instructions on the packet - you could use precooked packet rice if you like.
  4. Once the rice is cooked season it with the zest and juice of the limes and chopped coriander - save some lime to squeeze over the chicken.
  5. Cook the tender stem broccoli in boiling salted water for 2.5 minutes, strain off and allow to steam dry for a couple minutes then char in the griddle pan and season with salt and pepper.
