Cherry Tomato Salad

Ingredients

  • 1 Pack cherry tomatoes
  • 1 Ready to bake ciabatta
  • 1 Pack fresh olives
  • 1 Pack fresh sun-dried tomatoes
  • 2 Baby gem lettuce
  • 1/2 Red onion
  • 1/2 Pack basil
  • Olive oil - 4 tbsp for the dressing
  • 2 tsp Grain mustard
  • 1tsp Red wine vinegar
  • 1tsp Honey
  • Salt and pepper

Method

  1. Preheat an oven to 200 degrees.
  2. Tear up the ciabatta into small pieces and spread on a baking tray. Drizzle with olive oil and season lightly with salt and pepper.
  3. Bake until golden.
  4. Halve the olives, tomatoes and sundried tomatoes.
  5. Slice the onion and gem lettuce and tear up the basil.
  6. Whisk together the olive oil, red wine vinegar, mustard and honey with a pinch of salt and pepper.
  7. Place all ingredients in a bowl, dress with the dressing and toss to evenly coat.
