Cherry Tomato Salad

Ingredients
- 1 Pack cherry tomatoes
- 1 Ready to bake ciabatta
- 1 Pack fresh olives
- 1 Pack fresh sun-dried tomatoes
- 2 Baby gem lettuce
- 1/2 Red onion
- 1/2 Pack basil
- Olive oil - 4 tbsp for the dressing
- 2 tsp Grain mustard
- 1tsp Red wine vinegar
- 1tsp Honey
- Salt and pepper
Method
- Preheat an oven to 200 degrees.
- Tear up the ciabatta into small pieces and spread on a baking tray. Drizzle with olive oil and season lightly with salt and pepper.
- Bake until golden.
- Halve the olives, tomatoes and sundried tomatoes.
- Slice the onion and gem lettuce and tear up the basil.
- Whisk together the olive oil, red wine vinegar, mustard and honey with a pinch of salt and pepper.
- Place all ingredients in a bowl, dress with the dressing and toss to evenly coat.
