Crispy Irish Beef Mince with Veg and Rice

Fried beef tossed with colourful veggies, making a satisfying and flavourful meal.

Ingredients
- 1 Pack beef mince
- 150g Basmati rice - or two packs of precooked rice
- 1/2 Pack mangetout
- 1/2 Pack chestnut mushrooms - sliced
- 1/2 Red pepper - sliced
- 1/2 Yellow pepper - sliced
- 2tbsp Soy sauce
- 1tbsp Sugar
- 1 Clove of garlic - minced
Method
- In a heavy bottomed frying pan cook the beef over a medium-high heat until it has all browned nicely.
- Lower the heat to medium and clear a little area in the pan to add the minced garlic.
- Once the garlic starts to soften and colour add the sugar and soy sauce and keep stirring to coat the beef.
- Now turn the heat up again, add the vegetables and keep stirring. The beef should start to crisp up a little while the vegetables cook. The vegetables can still have a little bite so this shouldn’t take too long.
- Cook the rice following the instructions on the packet - you could use precooked packet rice if you like.
