Lamb Stew

Treat your family to this delicious lamb stew, made with carrots, garlic and onions.

Ingredients
- 500g Diced lamb
- 2 Onions - peeled and diced
- 3 Large carrots - peeled and diced
- 300g White potatoes peeled and diced
- 2 Cloves garlic - peeled and crushed
- 2tbsp Plain flour
- 2tbsp Tomato puree
- 4 Fresh thyme sprigs
- 500ml Boiling water
- 1 Beef stock cube
Method
- Bring a casserole dish to medium-high heat and colour the lamb with a little oil until evenly browned.
- Remove lamb, lower the heat and add the onion.
- Cook until soft then add the garlic and carrot.
- Cook for a couple minutes then add the flour and tomato puree.
- Cook for one minute.
- Add the boiling water, stock cube, potato, broth mix, thyme and lamb into the dish.
- Cover with the lid and cook for 1.5-2 hours, until the lamb is tender. Season to taste.
- Serve with crusty bread.
