Mango Chutney Cheese Toastie

Ingredients

  • 8 x slices Metro loaf Italian style
  • 100g Grated mature cheddar cheese
  • 100g Grated mozzarella cheese
  • 100g Mango chutney – plus more to serve
  • 1 x Medium red onion
  • 30g Baby spinach leaves
  • 50g Salted butter
  • 50ml Olive oil
  • 1 x Medium egg
  • Sea salt and black pepper

Method

  1. In a bowl mix together the two cheeses.
  2. Peel, halve and finely slice the red onion – then add the slices to the cheese.
  3. Add the egg, season with salt and pepper and mix well.
  4. Spread the mango chutney on four slices of the bread.
  5. Divide the spinach leaves between the four slices and put ontop of the chutney.
  6. Divide the cheese mixture into 4, and put ontop of the spinach leaves.
  7. Top each one with the remaing slices of bread.
  8. Put the butter and oil in a large frying pan and melt – fry the sandwiches on each side for 4/5 mins – till golden – pressing down slightly as you cook.
  9. Do this in batches if your frying pan isn’t big enough to do them all.
  10. Cut each sandwich into 3 – serve alongside some extra mango chutney.
