Mango Chutney Cheese Toastie

Ingredients
- 8 x slices Metro loaf Italian style
- 100g Grated mature cheddar cheese
- 100g Grated mozzarella cheese
- 100g Mango chutney – plus more to serve
- 1 x Medium red onion
- 30g Baby spinach leaves
- 50g Salted butter
- 50ml Olive oil
- 1 x Medium egg
- Sea salt and black pepper
Method
- In a bowl mix together the two cheeses.
- Peel, halve and finely slice the red onion – then add the slices to the cheese.
- Add the egg, season with salt and pepper and mix well.
- Spread the mango chutney on four slices of the bread.
- Divide the spinach leaves between the four slices and put ontop of the chutney.
- Divide the cheese mixture into 4, and put ontop of the spinach leaves.
- Top each one with the remaing slices of bread.
- Put the butter and oil in a large frying pan and melt – fry the sandwiches on each side for 4/5 mins – till golden – pressing down slightly as you cook.
- Do this in batches if your frying pan isn’t big enough to do them all.
- Cut each sandwich into 3 – serve alongside some extra mango chutney.
