Peppered Steak

Recipe

Steak, peppercorn sauce and sweet potato fries recipe.

Ingredients

  • 2 x Sirloin, Rib Eye or Fillet Steaks
  • 3g Black Peppercorns
  • 130ml Double Cream
  • 1 x Beef Stock Cube
  • 30ml Brandy
  • 5ml Lemon Juice
  • 400g Sweet Potato Fries

  

Method

  1. With a mortar and pestle coarsely grind the peppercorns.
  2. Press half into both sides of the chosen steaks.
  3. Preheat the oven to 220°c/400°c/gas 7.
  4. Put the sweet potato fries into the oven to cook for 20 mins – as instructions on the pack - or deep fry for 5 mins.
  5. Grill or pan fry the steaks to your liking.
  6. Meanwhile put the brandy, rest of the peppercorns, lemon juice and double cream in a small saucepan – crumble over the stock cube – slowly cook till the stock cube dissolves.
  7. Serve the steaks coated in the sauce alongside the sweet potato fries.
