Salmon and Broccoli Tagliatelle

Flaked Salmon and Broccoli Tagliatelle to fill up the kids when they return to school.

Ingredients

  • 300g Tagliatelle
  • 1 tbsp Olive Oil
  • 1 Onion, Finely Chopped
  • 1 Clove Garlic, Finely Chopped
  • 300g Soft Cheese
  • 1 Lemon, zested and juiced
  • Half Broccoli
  • 1 pack of 2 cooked marinated Salmon fillets
  • Fresh parsley for garnish, finely chopped

  

Method

  1. Put the pasta in a pan of boiling water and cook according to the instructions on the packet.
  2. Drain, reserving 150ml of the pasta water.
  3. Meanwhile, heat the oil in a large pan over medium heat and cook the onion, broccoli and garlic for 5 minutes until softened.
  4. Stir in the soft cream cheese and the lemon zest and juice. Bring to a gentle simmer, then stir in the pasta along with the reserved cooking water.
  5. Stir through the cooked salmon and half the chopped parsley. Divide between bowls and serve with a little seasoning.
