Salt and Pepper Halloumi Gyros

Salt and pepper seasoned halloumi gyros with crunchy veg, sweet chilli and peri peri mayonnaise.

Ingredients
- 2 x 225g packs Halloumi
- 1 x 190g pack Sweet Mini Peppers
- 1 Large Red Onion
- 1 x 35g pack Salt and Pepper Seasoning
- 1 tsp Paprika
- ½ tsp Chilli Flakes
- 50ml Squeezy Honey
- 4 Seeded Folded Flatbreads
- 75ml Peri Peri Mayonnaise
- 25ml Sweet Chilli Sauce
- 8 Little Gem Lettuce Leaves
- 50ml Olive Oil
Method
- In a bowl, mix the mayonnaise and sweet chilli sauce together and put to one side.
- Drain the halloumi, cut it into slices and put them in a bowl. Sprinkle over the salt and pepper seasoning, honey, paprika and chilli flakes and leave to marinate for 20 minutes.
- Peel and slice the red onion and cut the peppers into strips.
- Sauté the peppers and onion in half the olive oil for 5 minutes, then keep warm.
- In the same pan, fry the halloumi slices in the remaining oil until sticky and golden.
- Warm the flatbreads.
- Divide the lettuce leaves, peppers, onion and halloumi between the flatbreads and drizzle over the sauce and serve.
