Spaghetti Carbonara

This quick and easy family favourite will be a sure fire hit with all the family.

Ingredients

  • 200g Smoked Streaky Bacon, diced
  • 6 Egg Yolks
  • 40g Parmesan
  • 1 tsp Cracked Black Pepper
  • 1 Garlic Clove, finely diced
  • 150g Chestnut Mushrooms, finely sliced
  • 400g Fresh Egg Pasta
  • 60g Parmesan Shavings
  • Parsley to garnish

  

Method

  1. Fry the bacon until crispy, adding the mushrooms and garlic for the last three minutes.
  2. Place the spaghetti in a pan of boiling salted water and cook for 4-5 minutes.
  3. Whilst the pasta is cooking, place all the yolks in a bowl and stir in the grated parmesan.
  4. Drain the pasta into a colander, reserving some of the hot pasta water and transfer back to the pan and gently stir in the egg yolks, until all the pasta is coated.
  5. Add the pasta water a bit at a time, until your sauce is glossy but fairly thick (around 4 tbsp should be just right), add the bacon, mushrooms and cracked black pepper and stir thoroughly.
  6. Serve in bowls and garnish with extra black pepper, parsley and parmesan shavings.
