Spiced Pumpkin Rustic Mash with Chicken Leg Quarter

Ingredients

  • 1 Whole Farm Fresh Pumpkin
  • 1 Pack Ashfield Farm Fresh Chicken Leg Quarters
  • 1 Farm Fresh Red Onion
  • 1tsp Stonemill Ground Cumin
  • 1 tsp Stonemill Ground Ginger
  • 2 cloves Farm Fresh Garlic
  • 1 tsp Stonemill Thyme
  • 2 tbsp Solesta Olive Oil

  

Method

  1. Preheat the oven to 180°C. Peel, de-seed and dice the pumpkin. Toss in a bowl with half the olive oil, the onion, cumin, ginger, garlic and salt and pepper. Roast in the oven for 35-40 mins until soft.
  2. Rub the chicken skin with olive oil and sprinkle with the thyme and salt and pepper to taste.
  3. While the pumpkin is cooking, roast the chicken in a separate tray for 40 mins.
  4. When the pumpkin is cooked add to a blender and blitz until smooth in consistency.
  5. Serve the roasted chicken on top of the rustic mash.
