Superbowl Loaded Nachos

Forget the half time show - these loaded Nachos are the real star!

Ingredients
- 1 large Ripe Avocado
- 1 Lime
- 2 Salad Tomatoes, diced
- ½ tsp Smoked Paprika
- 200g Lightly Salted Tortilla Chips
- 50g Mozzarella, grated
- 50g Cheddar Cheese, grated
- 75g Soured Cream
- 30g Jalapeños, sliced
- 15g Fresh Coriander, chopped
- Salt & Freshly Ground Pepper
- Deep Baking Tray
Method
- Pre-heat oven to 200°C/180°C Fan/Gas Mark 6.
- Dice the avocado, place in a small mixing bowl, squeeze in the juice of half of the lime, season to taste and mix to combine.
- Add the tomatoes and smoked paprika to a small bowl, season to taste and stir to combine.
- Spread the tortilla chips in a thin layer over a baking sheet
- Mix the Cheddar and mozzarella together and sprinkle over the tortilla chips in a thin, even layer.
- Bake for 5-7 minutes, until the cheese has melted and the nachos are starting to turn golden.
- Add dollops of the tomato salsa, guacamole and soured cream over the tortilla chips, then scatter over the jalapeños.
- Garnish with coriander and serve with slices of lime.
