Swede and Onion Au Gratin

Swede, cheddar, rosemary, garlic and onions in one gloriously mouth-watering gratin.

Ingredients

  • 700g Swede
  • 2 Medium Red Onions
  • 2 tsp Dijon Mustard
  • 3g Fresh Rosemary, finely chopped
  • 300ml Double Cream
  • 100g Cheddar Cheese, grated
  • 2 Garlic Cloves
  • Sea Salt and Black Pepper

  

Method

  1. Pre-heat the oven to 200°C/Gas Mark 6.
  2. Peel the swede, cut in half lengthways and slice thinly.
  3. Boil in some salted water for 4 minutes and drain.
  4. Peel, half and thinly slice the red onions.
  5. Peel and mince the garlic.
  6. In a bowl, mix the cream, garlic, rosemary and mustard together and season with some black pepper.
  7. Place half the sliced onions in an ovenproof dish, top with half the swede slices, half the cream mix and half the cheese.
  8. Repeat with the remaining ingredients.
  9. Bake in the oven for 45 minutes.
