Tuna Pasta Bake with Cheese

A hearty bake combining a rich pasta sauce with chunky tuna.

Ingredients
- 1 tbsp Olive Oil
- 1x 500g pack Penne Pasta
- 1x onion - peeled and chopped
- 2x 145g tins Tuna Chunks in Brine - drained
- 500g Chopped Tomatoes
- Creamy Butter Salted - 2 tbsp
- Plain Flour - 2 tbsp
- 500ml Semi Skimmed Milk
- 360g Mild British Cheddar Cheese – grated
Method
- Pre-heat the oven 180°C/350°F/Gas Mark 4.
- Bring a large saucepan of water to the boil.
- Season with salt and add the olive oil.
- Add the pasta and the onion.
- Cook the pasta as per pack instructions, then drain.
- Mix the tuna with the pasta and onion.
- Add the chopped tomatoes and a pinch of black pepper. Stir to mix.
- Put the mixture into a large baking dish.
- Make the cheese sauce by melting the butter in a saucepan.
- Add the flour and stir well. Gradually add the milk and whisk until there are no lumps.
- On a gentle heat, bring the sauce to the boil, stirring all the time until thick.
- Add 260g of the grated cheese, season with salt and pepper and stir until the cheese has melted. Then pour the cheese sauce over the pasta.
- Sprinkle over the remaining cheese Bake in a pre-heated oven for 40 minutes.
