Whole Chicken and Seasonal Veg One Tray Roast

A blend of rich, golden roasted chicken complimented by the earthy sweetness of seasonal veg.

Ingredients
- 1 Chicken
- 1 Butternut squash
- 1 Bag Carrots
- 4 Red onions
- 4 Red potatoes
- Salt and pepper
- Olive oil
Method
- Preheat the oven to 210.
- Prep the chicken ready for the oven - tie the legs if you like, oil and season the skin.
- Chop the vegetables and potatoes keeping them quite chunky.
- Place the veg in a baking tray, season and drizzle with olive oil.
- Place the chicken on top of the veg and put in the oven.
- After 15 minutes turn the oven down to 180.
- Cook for a further hour. Cooking times can vary depending on ovens so please check the chicken is cooked through. If the veg needs longer you can allow the chicken to rest on a plate while the veg cooks for a bit longer in the oven.
