Whole Chicken and Seasonal Veg One Tray Roast

A blend of rich, golden roasted chicken complimented by the earthy sweetness of seasonal veg.

Ingredients

  • 1 Chicken
  • 1 Butternut squash
  • 1 Bag Carrots
  • 4 Red onions
  • 4 Red potatoes
  • Salt and pepper
  • Olive oil

Method

  1. Preheat the oven to 210.
  2. Prep the chicken ready for the oven - tie the legs if you like, oil and season the skin.
  3. Chop the vegetables and potatoes keeping them quite chunky.
  4. Place the veg in a baking tray, season and drizzle with olive oil.
  5. Place the chicken on top of the veg and put in the oven.
  6. After 15 minutes turn the oven down to 180.
  7. Cook for a further hour. Cooking times can vary depending on ovens so please check the chicken is cooked through. If the veg needs longer you can allow the chicken to rest on a plate while the veg cooks for a bit longer in the oven.
