Homemade Vegan Mayonnaise

Ingredients
- 120ml Soya Milk
- 200ml Vegetable Oil
- 1 tbsp Apple Cider Vinegar
- 1 tsp Dijon Mustard
- Salt and Pepper, to taste
Method
- Pour the soya milk into the bowl of a food processor and mix for 1 minute.
- With the food processor running very slowly, drizzle in the oil in a thin stream.
- Remove the lid of the food processor, scrape down the sides of the bowl and add the apple cider vinegar and mustard. Blend for a further 2 minutes, until thickened.
- Season to taste.
- Store in a jar in the fridge for up to 2 weeks.
