Superbowl Touchdown Brownies

Ingredients
For the brownies:
- 250g Caster Sugar
- 75ml Vegetable Oil
- 50ml Milk
- 1 Medium Egg
- 150g Plain Flour
- 50g Cocoa Powder
- ½ tsp Salt
- 1 tsp Baking Powder
- 100g Milk Chocolate Chips
Icing:
- 50g Icing Sugar
- 1 tsp Vanilla Extract
- A few drops of Water
- Approx. 20 x 25cm Baking Tray, greased and lined
Method
- Pre-heat oven to 180°C/200°C Fan/Gas Mark 6.
- In a mixing bowl whisk together the sugar, vegetable oil and milk until combined.
- Add the egg and whisk again.
- In a separate bowl, combine the flour, cocoa powder, baking powder and salt, then sift into the wet ingredient and fold together.
- Fold through the chocolate chips, then spread evenly into the prepared baking tray.
- Bake for 25-30 minutes, until the sides are well risen but the centre is still a little soft to the touch.
- Allow to cool completely as the brownie is easier to carve when cold.
To decorate:
- Sift the icing sugar into a small mixing bowl, add the vanilla extract and a few drops of water, then mix to combine.
- The icing should be thick, but pipeable – add a few more drops of water, if required.
- Cut the brownie into 8 portions, then carve into American football shapes by trimming the corners. Flip the brownies, so the flat side of the brownie is uppermost, and pipe on the lace detail.
