Whipped Brie with Chilli and Garlic Oil

Spicy, garlicy cheese – what’s not to love? Whipped brie is the perfect starter or side.

Ingredients
- 2 x 200g French Brie
- 100g Crème Fraiche
- 70ml Rapeseed Oil
- 1 tsp Garlic Granules
- ½ tsp Chilli Flakes
- ½ tsp Ground Ginger
- 1 tsp Paprika
- 1 Spring Onion, thinly sliced
- Sea Salt and Black Pepper
Method
- Cut the rind off the brie and discard and chop the brie into chunks.
- Put the brie and crème fraiche into a blender and blend until smooth, if it’s too thick, add a little more crème fraiche.
- Put the chilli, garlic, ginger and paprika into a heatproof bowl.
- Heat the oil and pour over – be careful as it might spit.
- Stir and season with some salt and pepper and allow to cool.
- Serve the whipped brie in a shallow dish, drizzle over the oil and scatter the spring onion on top.
- Great served with salted pretzels to scoop.
