Spicy Fish Nuggets

Add a spicy twist to the humble fish nugget with this gorgeous recipe.

Ingredients
- 260g pack Cod Loins
- 100g Fresh Breadcrumbs
- 2 flat tsp Dried Parsley
- 1 tsp Paprika
- 1 Medium Egg
- 15g Plain Flour
- 10ml White Wine Vinegar
- 35ml Peri Peri Sauce
- ½ tsp Ginger Pureé
- ½ tsp Garlic Granules
- Sea Salt and White Pepper
- Sweet Chilli Sauce/Soy Sauce to serve
Method
- Put the breadcrumbs, paprika and parsley in a bowl and mix well.
- In another bowl, mix the vinegar, peri peri sauce, ginger and garlic granules together.
- Whisk the egg and put in another bowl.
- Put the flour in a bowl and season with salt and pepper.
- Remove the cod from the wrapper and pat dry with some kitchen paper, then cut into strips.
- Put the cod in the peri peri sauce and gently coat.
- Then, gently toss in the seasoned flour, then the egg wash and finely the breadcrumbs.
- To cook in an air fryer, spray the tray then cook in a single layer at 180°C for 10-12 minutes, turning halfway through.
- To oven bake, cook at 200°C in a single layer for 15-18 minutes.
- Serve alongside the sweet chilli sauce or soy sauce.
