Striploin Steak with Creamy Mushrooms

Ingredients
- 2 Striploin steaks
- 2-3 Garlic cloves for the steak
- Thyme sprigs
- 1/2 Pack button mushrooms
- Knob of butter
- 1 Shallot - chopped
- 1 Clove garlic - crushed
- 150ml Double cream
- 2tbsp Wholegrain mustard
- 1/2 Pack cherry vine tomatoes
- 1 Pack asparagus spears
- Salt and pepper
- Olive oil
Method
- Preheat the oven to 210 degrees
- Season and cook the steak to your liking - adding the garlic and thyme in the pan towards the end to avoid burning them.
- For the sauce use the pan you used to cook the steak - add the knob of butter on medium heat.
- Add the shallot and garlic to the pan and cook for a couple minutes until it softens.
- Add the cream and wholegrain mustard and bring to the simmer.
- Season to taste with salt and pepper.
- Place the tomatoes and asparagus on a baking tray, season with salt and pepper and drizzle with olive oil. Cook them in the oven for approximately 10 minutes - check the asparagus is cooked.
