Striploin Steak with Creamy Mushrooms

Ingredients

  • 2 Striploin steaks
  • 2-3 Garlic cloves for the steak  
  • Thyme sprigs
  • 1/2 Pack button mushrooms
  • Knob of butter
  • 1 Shallot - chopped
  • 1 Clove garlic - crushed
  • 150ml Double cream
  • 2tbsp Wholegrain mustard
  • 1/2 Pack cherry vine tomatoes
  • 1 Pack asparagus spears
  • Salt and pepper
  • Olive oil

Method

  1. Preheat the oven to 210 degrees
  2. Season and cook the steak to your liking - adding the garlic and thyme in the pan towards the end to avoid burning them.
  3. For the sauce use the pan you used to cook the steak - add the knob of butter on medium heat.
  4. Add the shallot and garlic to the pan and cook for a couple minutes until it softens.
  5. Add the cream and wholegrain mustard and bring to the simmer.
  6. Season to taste with salt and pepper.
  7. Place the tomatoes and asparagus on a baking tray, season with salt and pepper and drizzle with olive oil. Cook them in the oven for approximately 10 minutes - check the asparagus is cooked.
