Broccoli and Leek Bake

Ingredients

  • 350g broccoli
  • 2 leeks
  • 500g Cucina lasagne sauce
  • 40g mature cheddar cheese – grated
  • 1 tsp Stonemills paprika
  • 1 tsp wholegrain mustard
  • Sea salt and black pepper

Method

  1. Preheat the oven to 200°c/400°f/gas6
  2. Wash the leeks and chop into rings
  3. Break the broccoli into florets
  4. Cook them both in some boiling water for 3 mins and drain well
  5. In a bowl mix the sauce with the mustard, season with some black pepper and the paprika – mix well – add the broccoli and leeks and gently mix
  6. Put this into an oven proof dish – sprinkle over the cheese
  7. Bake in the oven for 20 mins
